Commercial refrigeration is a vital but often overlooked backbone of South Australia’s food supply chain. From the moment food is harvested or produced, right through to its display in a shop, maintaining precise temperatures is essential for safety and quality. The solutions used are highly diverse, tailored to the specific needs and scale of each business.

1. On-Farm & Post-Harvest Cooling

For those at the start of the supply chain, the immediate priority is preserving the quality of fresh produce. This is achieved with Cool Rooms and Freezer Rooms, which are custom-built, insulated spaces that can be as small as a mobile unit or as large as a permanent warehouse. To rapidly cool down freshly harvested items, producers use Blast Chillers/Freezers, such as walk-in units or hydro-coolers, which are crucial for locking in freshness and extending shelf life before transport.

2. Butcher Shops & Artisan Producers

These businesses need a combination of storage, processing, and display solutions. Walk-in Cool Rooms and Freezer Rooms are standard for back-of-house storage, often fitted with specialised “meat rail” systems for proper aging and air circulation. In the front of the shop, Refrigerated Display Cases (also known as serve-over counters) are the centrepiece, designed to professionally showcase products. For on-site preparation, Preparation Counters (or refrigerated prep benches) keep ingredients chilled. For artisan products, Dry-Aging Cabinets/Rooms provide a precisely controlled environment to enhance meat’s flavour and tenderness.

This sector handles large-scale, industrial refrigeration for distribution and long-term storage. Giant Ammonia-based Refrigeration Plants are a common choice for these facilities due to their high efficiency and cost-effectiveness. The cold chain is maintained within massive, purpose-built Chiller/Freezer Rooms equipped with high-speed doors to minimise temperature loss. These warehouses connect to trucks via Refrigerated Docks and Loading Bays, ensuring goods remain cold during transfer.

4. Retail Display & Sales

In a retail setting, refrigeration must balance optimal temperature with customer access and energy efficiency. A variety of Refrigerated Display Cabinets are used, including open-fronted multi-decks for fresh produce and dairy, energy-efficient Glass Door Cases for frozen foods, and Island Freezers for promotional items. Supermarkets also feature Serve-over Counters in their deli and seafood sections. The overall refrigeration system can be either a Remote System, with noisy condensing units located away from the store, or a Self-Contained Unit, where all components are built into a single, compact cabinet.

5. Manufacturing & Production

For manufacturers, refrigeration is about process cooling and large-scale storage of ingredients and finished goods. Process Chillers circulate a chilled liquid to cool down industrial processes, from mixing vats to bottling lines. Factories use either Air-Cooled or Water-Cooled Condensing Units, depending on their scale and available resources. In modern facilities, integrated Automated Storage and Retrieval Systems (ASRS) with robotics work hand-in-hand with large-scale refrigeration to manage the movement of temperature-controlled goods.
